For the Chicken

  • 700 g halal boneless, skinless chicken thighs
  • 1 cup cola
  • 2 tbsp fresh lime juice
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp black pepper
  • ½ tsp salt
  • ¼ tsp chili flakes, optional

For the Dirty Soda Finish

  • ¼ cup cola
  • 2 tbsp coconut cream or heavy cream
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • Lime wedges, for serving

Instructions

  • Prepare the marinade:
    In a large bowl, whisk together the cola, lime juice, soy sauce, brown sugar, olive oil, garlic, smoked paprika, cumin, black pepper, salt, and chili flakes.
  • Marinate the chicken:
    Add the halal chicken thighs and coat well. Cover and refrigerate for 2–8 hours. Don’t marinate overnight, as the acidity can affect the texture of the chicken.
  • Prepare the grill:
    Preheat your grill to medium-high heat, around 200–220°C (400–425°F). Lightly oil the grates.
  • Grill the chicken:
    Remove the chicken from the marinade and discard the used marinade. Grill for approximately 5–7 minutes per side, depending on thickness, until nicely charred and the internal temperature reaches 74°C (165°F).
  • Make the dirty soda finish:
    Mix the fresh cola, coconut cream, lime juice, and honey. For a slightly thicker glaze, simmer the mixture in a small saucepan for 2–3 minutes, then let it cool slightly.
  • Finish and serve:
    Brush the grilled chicken with the dirty soda glaze during the final minute of cooking or drizzle it over the chicken just before serving.

Notes

Serve with grilled corn, crispy potatoes, coleslaw, steamed rice, or a fresh cucumber-lime salad. Add plenty of lime wedges for a bright, refreshing finish.
