  • 1½ cups (190 g) all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 2 tbsp loose-leaf Earl Grey tea, finely ground, or contents of 3 tea bags
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120 ml) whole milk
  • 1 tsp vanilla extract
  • ½ cup (60 g) shelled pistachios, finely chopped
  • 1 tbsp lemon zest

For the Lemon Glaze

  • 1 cup (120 g) powdered sugar
  • 23 tbsp fresh lemon juice
  • ½ tsp lemon zest

For Garnishing

  • 2 tbsp chopped pistachios
  • A little extra lemon zest, optional

Instructions

  • Prepare the oven:
    Preheat the oven to 350°F (175°C). Grease a 9 × 5-inch loaf pan and line it with parchment paper.
  • Mix the dry ingredients:
    In a bowl, whisk together the flour, baking powder, salt, and finely ground Earl Grey tea.
  • Cream the butter and sugar:
    In a separate large bowl, beat the softened butter and sugar for 2–3 minutes, until light and fluffy.
  • Add the eggs:
    Beat in the eggs one at a time, then mix in the vanilla and lemon zest.
  • Combine:
    Add the dry ingredients in two or three additions, alternating with the milk. Mix just until combined—do not overmix.
  • Add pistachios:
    Fold in the chopped pistachios gently.
  • Bake:
    Pour the batter into the prepared loaf pan and smooth the top. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Cool:
    Let the cake cool in the pan for about 10–15 minutes, then transfer it to a wire rack to cool completely.
  • Make the lemon glaze:
    Whisk the powdered sugar with 2 tablespoons of lemon juice. Add more lemon juice, a little at a time, until you have a thick but pourable glaze.
  • Glaze and decorate:
    Drizzle the lemon glaze over the cooled loaf. Sprinkle with chopped pistachios and a little lemon zest.

Notes

Slice and serve with tea, coffee, or a dollop of lightly whipped cream. For the best Earl Grey flavor, allow the loaf to rest for a few hours before serving.
