Instructions
1. Make the Apple Filling
- In a small saucepan, combine the diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, cornstarch, and water.
- Cook over medium heat for 5–7 minutes, stirring occasionally, until the apples soften and the mixture thickens.
- Stir in the vanilla extract and let the filling cool completely.
2. Prepare the Puff Pastry
- Roll the thawed puff pastry slightly on a lightly floured surface.
- Cut it into 4 equal squares.
- Spoon about 2 tablespoons of cooled apple filling into the center of each square.
- Brush the edges with beaten egg.
- Fold each square diagonally into a triangle and press the edges together with a fork to seal.
- Brush the tops with more egg wash and sprinkle with coarse sugar if desired.

3. Air Fry
