Description

Understanding why this recipe tastes amazing requires breaking down its main components. Exploring both parts reveals how they blend together seamlessly. This unique apple pie snickerdoodles recipe creates a plush pocket around cooked fruit.

Ingredients

Scale

For the Apple Filling

  • 2 medium apples, peeled, cored, and finely diced
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1 tsp lemon juice
  • 1 tbsp butter
  • 1 tsp cornstarch

For the Cookie Dough

  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ tsp baking soda
  • ½ tsp cream of tartar
  • ¼ tsp salt

For the Cinnamon-Sugar Coating

  • ¼ cup (50 g) granulated sugar
  • 1½ tsp ground cinnamon

Instructions

  • Prepare the apple filling:
Melt the butter in a small pan over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 4–5 minutes until the apples soften slightly.
  • Stir in the cornstarch and cook for another 1–2 minutes until the mixture thickens. Remove from heat and let it cool completely.
  • Make the dough:
Beat the softened butter, granulated sugar, and brown sugar until light and creamy. Add the egg and vanilla and mix well.
  • In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt. Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
  • Fill the cookies:
Take about 1½ tablespoons of dough and flatten it slightly. Place about 1 teaspoon of the cooled apple filling in the center. Fold the dough around the filling and gently roll into a ball.
  • Coat:
Mix the sugar and cinnamon in a small bowl. Roll each dough ball in the cinnamon-sugar mixture.
  • Bake:
Place the cookies on a parchment-lined baking sheet, leaving space between them. Bake at 350°F (175°C) for 10–13 minutes, until the edges are lightly golden and the centers still look soft.
  • Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack.
