- 3 cups cooked chicken, shredded or cubed
- 4 cups fresh broccoli florets
- 1 can (10.5 oz) cream of chicken soup
- ½ cup mayonnaise
- ½ cup sour cream
- ½ cup milk
- 1 cup shredded cheddar cheese, divided
- 1 tsp lemon juice
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp black pepper
- ½ cup breadcrumbs or crushed crackers
- 2 tbsp melted butter
- ¼ cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
- Cook the broccoli: Steam or blanch the broccoli for 3–4 minutes, until bright green and slightly tender. Drain well.
- Make the sauce: In a bowl, combine cream of chicken soup, mayonnaise, sour cream, milk, lemon juice, garlic powder, onion powder, and black pepper. Stir in ½ cup of the cheddar cheese.
- Assemble: Spread the broccoli evenly in the casserole dish. Add the cooked chicken on top, then pour the creamy sauce over everything.
- Add the topping: Sprinkle the remaining cheddar cheese over the casserole. Combine breadcrumbs, Parmesan, and melted butter, then sprinkle evenly over the top.
- Bake uncovered for 25–30 minutes, until bubbling and golden brown.
- Rest and serve: Let the casserole stand for 5 minutes before serving.
Notes
Rotisserie chicken works especially well for this recipe and makes preparation quick and easy. Serve with rice, mashed potatoes, or crusty bread.
