For the Chimichurri Sauce
- 1 cup fresh parsley, finely chopped
- 2 tbsp fresh cilantro, finely chopped (optional)
- 3 cloves garlic, minced
- 2 tbsp fresh oregano, chopped (or 2 tsp dried oregano)
- ½ tsp red pepper flakes
- 2 tbsp red wine vinegar
- ½ cup extra-virgin olive oil
- ½ tsp salt
- ¼ tsp black pepper
For the Beef
- 1½ lbs (680 g) flank steak or sirloin steak
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
For the Rice Bowls
- 3 cups cooked white or brown rice
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1 cup cucumber, diced
- ½ small red onion, thinly sliced
- 1 cup corn kernels (fresh or cooked)
- Lime wedges, for serving
Instructions
1. Make the Chimichurri
- In a bowl, combine the parsley, cilantro, garlic, oregano, red pepper flakes, red wine vinegar, olive oil, salt, and black pepper.
- Stir well and let the sauce sit for at least 15 minutes to develop flavor.
2. Cook the Beef
- Pat the steak dry and season with salt, pepper, smoked paprika, and garlic powder.
- Heat olive oil in a large skillet or grill pan over medium-high heat.
- Cook the steak for 4–5 minutes per side for medium-rare, or until your preferred doneness.
- Transfer to a cutting board and let it rest for 10 minutes before slicing thinly against the grain.
3. Assemble the Bowls
- Divide the cooked rice among four serving bowls.
- Arrange the sliced beef, tomatoes, avocado, cucumber, corn, and red onion over the rice.
- Spoon a generous amount of chimichurri sauce over the beef.
- Serve with fresh lime wedges.
