  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • ½ cup (about 50 g) sun-dried tomatoes, sliced
  • 1½ cups heavy cream
  • ½ cup chicken broth (or pasta water)
  • ¾ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • ½ teaspoon red pepper flakes (optional)
  • Fresh basil or parsley, chopped, for garnish

Instructions

  • Cook the pasta
    • Boil the pasta in salted water until al dente.
    • Reserve about ½ cup of pasta water, then drain.
  • Season and cook the shrimp
    • Toss shrimp with paprika, Italian seasoning, salt, and pepper.
    • Heat olive oil in a large skillet over medium-high heat.
    • Cook shrimp for 1–2 minutes per side until pink.
    • Remove from the skillet and set aside.
  • Make the creamy sauce
    • Reduce heat to medium.
    • Melt butter and sauté garlic for about 30 seconds.
    • Add the sun-dried tomatoes and cook for 1 minute.
    • Pour in the heavy cream and chicken broth, stirring well.
    • Simmer for 2–3 minutes.
  • Add cheese and spinach
    • Stir in the Parmesan until melted.
    • Add spinach and cook until wilted.
    • If the sauce is too thick, add a splash of reserved pasta water.
  • Combine everything
    • Return the shrimp to the skillet.
    • Add the cooked pasta and toss until evenly coated.
    • Sprinkle with red pepper flakes if desired.
  • Serve
    • Garnish with fresh basil or parsley and extra Parmesan.
    • Serve immediately with garlic bread or a green salad.
