Description
This dessert is a masterful blend of rich flavors and ultra-light textures. It was created for those who love holiday spices without any baking hassle. A classic chiffon filling relies on whipped egg whites folded into a gelatin-set base. This method creates a marshmallow-like consistency. Every single bite melts on your tongue effortlessly.
Ingredients
For the crust
-
1½ cups graham cracker crumbs
-
¼ cup unsalted butter, melted
-
2 tablespoons granulated sugar
For the eggnog chiffon filling
-
1 cup eggnog, chilled
-
¾ cup granulated sugar, divided
-
2 teaspoons unflavored gelatin
-
3 tablespoons cold water
-
3 large eggs, separated
-
1 teaspoon vanilla extract
-
½ teaspoon ground nutmeg, plus extra for garnish
-
1 cup heavy whipping cream, chilled
For the topping (optional)
-
½ cup heavy whipping cream
-
1 tablespoon powdered sugar
-
A pinch of ground nutmeg
Instructions
1. Prepare the crust
-
Combine the graham cracker crumbs, melted butter, and sugar in a bowl.
-
Press the mixture firmly into the bottom and sides of a 9-inch pie dish.
-
Refrigerate for 20–30 minutes while preparing the filling.
2. Bloom the gelatin
-
Sprinkle the gelatin over 3 tablespoons of cold water in a small bowl.
-
Let it stand for 5 minutes until softened.
-
Gently warm it until completely dissolved. Do not boil.
3. Prepare the eggnog mixture
-
In a heatproof bowl, whisk together the egg yolks, ½ cup of the sugar, and the eggnog.
-
Set the bowl over a saucepan of gently simmering water, making sure the bowl does not touch the water.
-
Stir constantly until the mixture reaches 160°F (71°C) and thickens slightly.
-
Remove from the heat and stir in the dissolved gelatin, vanilla extract, and nutmeg.
-
Allow the mixture to cool until slightly thickened but not fully set.
4. Whip the egg whites
-
In a clean bowl, beat the egg whites until foamy.
-
Gradually add the remaining ¼ cup sugar while beating.
-
Continue until soft peaks form.
Food safety note: Because egg whites are not cooked in this step, use pasteurized egg whites suitable for whipping, or heat the whites and sugar together over a water bath to 160°F (71°C) before whipping.
5. Whip the cream
-
Beat 1 cup of chilled heavy cream until medium-stiff peaks form.
-
Keep refrigerated until ready to fold into the filling.
6. Fold the chiffon filling
-
Gently fold the whipped egg whites into the cooled eggnog mixture.
-
Fold in the whipped cream in two additions, using a spatula and gentle movements to preserve the airy texture.
-
Pour the filling into the chilled crust and smooth the top.
7. Chill the pie
-
Refrigerate for at least 4–6 hours, or overnight, until the filling is firm enough to slice.
-
Keep the pie refrigerated until serving.
8. Garnish and serve
-
Beat ½ cup heavy cream with the powdered sugar until soft peaks form.
-
Pipe or spoon the whipped cream over the pie.
-
Sprinkle lightly with ground nutmeg and serve chilled.
