Once cooled, they’re filled with a smooth cherry jelly that adds a burst of tartness balanced by a hint of lemon juice. To finish, a rich chocolate cream, made with dark chocolate and lightly sweetened with powdered sugar and vanilla, is piped over the cherry layer, giving a creamy, decadent contrast to the fruity filling. These elegant eclairs make a beautiful and indulgent dessert, perfect for special occasions or simply a treat for yourself!

    For the Eclair Shells:
    1 cup water
    1/2 cup unsalted butter
    1 cup all-purpose flour
    1 teaspoon granulated sugar
    1/4 teaspoon salt
    4 large eggs
    For the Cherry Filling:
    1 cup cherry jelly or jam
    1 tablespoon lemon juice
    For the Chocolate Cream:
    1 cup heavy cream
    4 ounces dark chocolate, chopped
    1 tablespoon powdered sugar
    1 teaspoon vanilla extract

Instructions

Directions:
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat, stirring until the butter melts. Remove from heat and stir in flour until a dough forms.
Let the mixture cool for about 5 minutes. Then, add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Transfer the dough to a piping bag fitted with a large round tip. Pipe 4-inch long lines onto the prepared baking sheet, leaving space between each eclair.
Bake for 20-25 minutes, or until puffed and golden brown. Do not open the oven door during baking. Allow to cool completely on a wire rack.
For the cherry filling, mix the cherry jelly with lemon juice until smooth. Use a piping bag to fill each cooled eclair with the cherry filling.
For the chocolate cream, heat the heavy cream in a saucepan until just simmering. Pour it over the chopped chocolate and let sit for 2-3 minutes. Stir until smooth, then mix in powdered sugar and vanilla extract. Let cool slightly before using.
Once the chocolate cream is ready, pipe it into the eclairs on top of the cherry filling. Optionally, drizzle additional chocolate over the top for garnish.
