Flaky Cheddar Bay Biscuits

Flaky Cheddar Bay Biscuits Recipe

  • Author: David Andersson
  • Total Time: 33 minutes

  • Diet: Vegetarian

Description

At its core, flaky cheddar bay biscuits are a savory variation of traditional American quick bread rolls. Unlike sweet breakfast scones or basic plain drop biscuits, this recipe combines sharp cheddar cheese and aromatic garlic powder directly into the flour mix. What sets this specific version apart from standard drop biscuits is the technique used to handle the dough. By folding the cold dough over itself several times before baking, you build distinct tender layers that rise high and split apart effortlessly when pulled open.

Ingredients

Scale

For the biscuits

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp dried parsley
  • ½ cup cold unsalted butter, cubed
  • 1 cup sharp cheddar cheese, shredded
  • ¾ cup cold buttermilk

For the topping

  • 3 tbsp melted butter
  • ½ tsp garlic powder
  • ½ tsp dried parsley
  • Pinch of salt

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, baking powder, baking soda, garlic powder, salt, and parsley.
  • Cut the cold butter into the flour mixture using a pastry cutter or your fingertips until coarse crumbs form.
  • Fold in the shredded cheddar cheese.
  • Pour in the cold buttermilk and gently stir just until a soft dough forms. Do not overmix.
  • Turn the dough onto a lightly floured surface. Gently fold it over itself 3–4 times to create flaky layers.
  • Pat the dough to about ¾-inch thickness and cut out 10 biscuits.
  • Place the biscuits close together on the prepared baking sheet.
  • Bake for 15–18 minutes, until puffed and golden brown.
  • Mix the melted butter, garlic powder, parsley, and salt. Brush the warm biscuits generously with the garlic-butter topping.
  • Serve warm.

Notes

For extra-flaky biscuits, keep the butter and buttermilk cold and avoid overmixing the dough. Serve warm with extra garlic butter for the best flavor.
