  • ¼ cup (25 g) unsweetened cocoa powder
  • ¼ tsp salt
  • ½ tsp espresso powder, optional

Instructions

  • Prepare the pan: Preheat the oven to 350°F (175°C). Grease a 9-inch round springform pan and line the bottom with parchment paper.
  • Melt chocolate and butter: Place the dark chocolate and butter in a heatproof bowl. Melt gently over a double boiler or microwave in short intervals, stirring until smooth. Let cool slightly.
  • Whisk eggs and sugars: In a large bowl, whisk the eggs, granulated sugar, brown sugar, and vanilla for about 2–3 minutes, until slightly thickened.
  • Combine: Slowly whisk the melted chocolate mixture into the egg mixture until smooth.
  • Add dry ingredients: Sift in the cocoa powder and salt. Add espresso powder if using. Gently fold until just combined.
  • Bake: Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes, until the edges are set and the center still has a slight wobble.
  • Cool: Let the torte cool in the pan for 20–30 minutes, then carefully remove the sides. Allow it to cool completely before slicing.
  • Serve: Dust with powdered sugar and serve with fresh berries or whipped cream.
