Description
If you have ever stepped inside a premium coffee house, you have likely seen those velvety, melt-in-your-mouth breakfast rounds glowing under the heat lamp. Those are sous vide egg bites, and while they taste incredible, buying them every day can quickly drain your wallet.
Ingredients

- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar, mozzarella, or Monterey Jack)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional mix-ins:
- cooked bacon or turkey bacon
- spinach
- diced bell peppers
- mushrooms
- green onions
Instructions
- Preheat oven to 350°F (175°C).
- Grease a muffin tin well or use silicone muffin cups.
- Blend eggs, cottage cheese, shredded cheese, salt, and pepper until smooth.
- Stir in any mix-ins.
- Pour mixture into muffin cups about 3/4 full.
- Bake for 20–25 minutes until puffed and set.
- Cool a few minutes before removing.

These cottage cheese egg bites are one of my favorite quick breakfasts — soft, cheesy, and packed with protein. They’re easy to customize with whatever veggies or cheese you have on hand, and they reheat perfectly for busy mornings.
