The Ultimate Mini Pancake Cereal Recipe for a Fun Breakfast

  • Author: David Andersson
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

Understanding the appeal of this whimsical meal starts with its unique presentation and fun structure. A standard mini pancake cereal recipe takes traditional pancake batter and uses a squeeze bottle or piping tool to produce hundreds of coin-sized pancakes. Instead of stacking three or four large cakes on a plate, you cook dozens of tiny batter drops that measure roughly one centimeter across.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¾ cup milk
  • 1 large egg
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • Butter or oil, for cooking

Instructions

1. Make the batter
In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk the milk, egg, melted butter, and vanilla. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Don’t overmix.

2. Make mini pancakes
Transfer the batter to a piping bag or squeeze bottle.

Heat a non-stick skillet over low to medium heat and lightly grease it.

Squeeze tiny dots of batter onto the pan, about 1–2 cm wide.

3. Cook
Cook for about 30–60 seconds, or until bubbles appear and the bottoms are golden.

Flip each mini pancake using a small spatula or chopsticks and cook for another 20–30 seconds.

Repeat with the remaining batter.

4. Serve as cereal
Place the mini pancakes in a bowl. Top with maple syrup, honey, fresh berries, sliced banana, powdered sugar, or chocolate chips.

Notes

Mini Pancake Cereal is a fun, kid-friendly breakfast that makes ordinary pancakes extra special. Serve the tiny pancakes with milk, maple syrup, fresh berries, banana slices, or chocolate chips and enjoy them warm for the best taste and texture.
