Description

To understand this dessert, you have to rethink what a cookie can be. Traditionally, a cookie is a flat, baked disc with crisp edges and a chewy center. A fudgy microwave cookie-in-a-mug, however, is a hybrid creation. It combines the rich, buttery flavor profile of a classic chocolate chip cookie with the moist, dense, and spoonable texture of a molten lava cake or a rich brownie.

  • 1 tbsp unsalted butter
  • 1 tbsp brown sugar
  • 1 tbsp white sugar
  • 1 tbsp milk
  • ¼ tsp vanilla extract
  • 3 tbsp all-purpose flour
  • Pinch of salt
  • 12 tbsp chocolate chips

Instructions

  • In a microwave-safe mug, melt the butter (about 15–20 seconds).
  • Stir in the brown sugar and white sugar until combined.
  • Mix in the milk and vanilla.
  • Add the flour and salt. Stir until a soft cookie dough forms.
  • Fold in most of the chocolate chips, saving a few for the top.
  • Microwave on high for 40–60 seconds. Start with 40 seconds; the center should still look slightly soft.
  • Let it cool for 1–2 minutes. It will continue to set while staying fudgy.
