Description
To put it simply, this dish is a modern, genius twist on a classic Tex-Mex favorite. Traditional fajitas require you to stand over a blazing hot cast iron skillet, searing components in batches while smoke fills your kitchen. This version reimagines that entire process by taking succulent shrimp, crisp bell peppers, and sweet onions, and wrapping them snugly inside individual sheets of heavy-duty aluminum foil. Before the packets are sealed, everything is drenched in a luxurious mixture of melted butter, pungent garlic, bright lime juice, and a robust blend of earthy spices.
Ingredients
- 1½ pounds (680 g) large shrimp, peeled and deveined
- 2 bell peppers (any colors), thinly sliced
- 1 medium onion, thinly sliced

- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro (optional)
For serving
- Warm flour or corn tortillas
- Sour cream or Greek yogurt
- Salsa
- Guacamole

Instructions
- Preheat the grill to medium-high heat or the oven to 425°F (220°C).
- In a small bowl, mix the melted butter and minced garlic.
- In a large bowl, combine the shrimp, bell peppers, and onion.
- Add the olive oil, garlic butter, chili powder, smoked paprika, cumin, onion powder, garlic powder, salt, pepper, and lime juice. Toss until everything is evenly coated.
- Cut 4 large sheets of heavy-duty aluminum foil. Divide the shrimp and vegetable mixture evenly among them.
- Fold and seal each packet tightly, leaving a little space inside for steam.
-
Cook:
- Grill: 8–10 minutes.
- Oven: 12–15 minutes.
The shrimp are done when they turn pink and opaque, and the vegetables are tender-crisp.
- Carefully open the packets (hot steam will escape), sprinkle with cilantro if desired, and serve with warm tortillas and your favorite toppings.
Notes
Serve these foil packets with warm tortillas and your favorite toppings for a fun, customizable meal the whole family will enjoy. Fresh lime juice and cilantro add the perfect finishing touch.
