Lemon Asparagus

1 lb (450 g) asparagus, trimmed

1 tbsp olive oil

Zest of 1 lemon

1–2 tbsp fresh lemon juice

Salt & pepper
Instructions

Prep Steak:
Pat steak dry and season generously with salt and pepper. -
Sear Steak Bites:
Heat olive oil in a large skillet over high heat.
Add steak in a single layer (work in batches if needed).
Sear 2–3 minutes per side until browned. Remove and set aside. -
Garlic Butter:
Lower heat to medium. Add butter, garlic, and herbs.
Sauté 30 seconds until fragrant. -
Return Steak:
Toss steak bites in the garlic butter. Cook 1 minute more.
Remove from skillet and keep warm. -
Cook Asparagus:
In the same pan, add olive oil and asparagus.
Cook 3–5 minutes, tossing until tender-crisp. -
Finish Asparagus:
Add lemon zest and juice. Season to taste. -
