Description
At its simplest, the Garlic Mashed Cauliflower recipe is a preparation where cauliflower florets are softened through boiling or steaming and then processed into a puree that mimics the consistency of mashed potatoes. Unlike potatoes, which are high in starch, cauliflower is mostly water and fiber. This means that the preparation requires a slightly different approach to ensure the final product is thick and luscious rather than watery or thin.
Ingredients

1 large head cauliflower, cut into florets

3–4 cloves garlic, peeled

2 tbsp butter (or olive oil for dairy-free)

¼ cup milk or cream (or unsweetened plant milk)

Salt & pepper, to taste

Optional: Parmesan cheese, chives, nutmeg
Instructions

Bring a large pot of salted water to boil.

Add cauliflower florets and garlic cloves; cook 10–12 minutes until very tender.

Drain well and return to pot.

Add butter and milk; mash with a potato masher or blend with an immersion blender until smooth and creamy.

Season with salt, pepper, and optional Parmesan or nutmeg.

Garnish with fresh chives if desired and serve hot.
