Gluten-Free Almond Flour Strawberry Muffins are soft baked muffins made using almond flour instead of wheat flour. Almond flour is naturally gluten-free and made from finely ground blanched almonds. It gives these muffins a moist, tender crumb that stays soft for days.
Ingredients
2½ cups blanched almond flour
½ tsp baking soda
¼ tsp salt
2 large eggs, room temperature
â…“ cup honey or maple syrup
¼ cup melted coconut oil or butter
1 tsp vanilla extract
1½ cups fresh strawberries, diced small
Optional Add-Ins
1 tbsp lemon zest
¼ cup sliced almonds (for topping)
¼ cup mini chocolate chips (dairy-free if needed)
Instructions
1. Prep
Preheat oven to 350°F (175°C).
Line a muffin tin with paper liners or grease well.
2. Mix Dry Ingredients
In a bowl, whisk almond flour, baking soda, and salt.
3. Mix Wet Ingredients
In another bowl, whisk eggs, honey/maple syrup, oil, and vanilla until smooth.
4. Combine
Stir wet ingredients into dry until fully incorporated.
Gently fold in strawberries (and any add-ins).
5. Bake
Divide batter evenly among muffin cups.
Sprinkle with sliced almonds if using.
Bake 18–22 minutes, until tops are set and lightly golden.
6. Cool
Cool in pan for 10 minutes, then transfer to a rack.
Notes
For extra sweetness and texture, sprinkle sliced almonds or a few fresh strawberry pieces on top before baking. These muffins are perfect for breakfast, brunch, or a healthy snack, and a light drizzle of honey or a smear of almond butter makes them even more irresistible.
