Golumpki-Spiced Halal Beef Hand Pies

  • Author: David Andersson
  • Total Time: 45 minutes
  • Yield: 8 hand pies 1x

Description

To truly appreciate Golumpki-Spiced Halal Beef Hand Pies, it helps to understand the two distinct culinary traditions coming together in this recipe. Traditional Polish gołąbki consists of tender cabbage leaves wrapped tightly around a filling of ground meat, rice, and delicate seasonings, then simmered slowly in a rich tomato-based broth. Hand pies, on the other hand, belong to a global family of portable pastries like turnovers, empanadas, and pasties that have fed working families and travelers for centuries.

Ingredients

Scale

For the Filling

  • 450 g halal ground beef
  • 1 cup finely shredded green cabbage
  • ½ cup cooked white rice
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp sweet paprika
  • ½ tsp smoked paprika
  • ½ tsp dried marjoram
  • ½ tsp caraway seeds, optional
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp beef stock or water

For the Pastry

  • 2 sheets ready-made puff pastry, thawed
  • 1 egg, beaten
  • 1 tbsp sesame seeds, optional

Instructions

  • Cook the vegetables:
Heat olive oil in a skillet over medium heat. Add the onion and cabbage and sauté for 4–5 minutes, until softened. Add garlic and cook for another 30 seconds.
  • Brown the beef:
Add the halal ground beef and cook for 5–7 minutes, breaking it apart with a spoon, until browned and fully cooked.
  • Season the filling:
Stir in tomato paste, paprika, marjoram, caraway seeds, salt, pepper, and beef stock. Cook for another 2 minutes.
  • Add the rice:
Stir in the cooked rice and mix well. Remove from heat and allow the filling to cool for about 10 minutes.
  • Prepare the pastry:
Preheat the oven to 200°C (400°F). Roll out the puff pastry and cut it into 8 equal rectangles or circles.
  • Fill the hand pies:
Place a generous spoonful of the beef mixture in the center of each pastry piece. Fold the pastry over the filling and press the edges firmly with a fork to seal.
  • Brush with egg:
Arrange the pies on a lined baking sheet. Brush the tops with beaten egg and sprinkle with sesame seeds if desired. Cut a small slit in each pie for steam to escape.
  • Bake:
Bake for 20–25 minutes, or until the pastry is puffed and golden brown.
  • Rest and serve:
Let the hand pies cool for 5 minutes before serving.

Notes
