Description
To truly appreciate Golumpki-Spiced Halal Beef Hand Pies, it helps to understand the two distinct culinary traditions coming together in this recipe. Traditional Polish gołąbki consists of tender cabbage leaves wrapped tightly around a filling of ground meat, rice, and delicate seasonings, then simmered slowly in a rich tomato-based broth. Hand pies, on the other hand, belong to a global family of portable pastries like turnovers, empanadas, and pasties that have fed working families and travelers for centuries.
Ingredients
For the Filling
- 450 g halal ground beef
- 1 cup finely shredded green cabbage
- ½ cup cooked white rice
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp sweet paprika
- ½ tsp smoked paprika
- ½ tsp dried marjoram
- ½ tsp caraway seeds, optional
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 2 tbsp beef stock or water
For the Pastry
- 2 sheets ready-made puff pastry, thawed
- 1 egg, beaten
- 1 tbsp sesame seeds, optional
Instructions
- Cook the vegetables:
Heat olive oil in a skillet over medium heat. Add the onion and cabbage and sauté for 4–5 minutes, until softened. Add garlic and cook for another 30 seconds. - Brown the beef:
Add the halal ground beef and cook for 5–7 minutes, breaking it apart with a spoon, until browned and fully cooked. - Season the filling:
Stir in tomato paste, paprika, marjoram, caraway seeds, salt, pepper, and beef stock. Cook for another 2 minutes. - Add the rice:
Stir in the cooked rice and mix well. Remove from heat and allow the filling to cool for about 10 minutes. - Prepare the pastry:
Preheat the oven to 200°C (400°F). Roll out the puff pastry and cut it into 8 equal rectangles or circles. - Fill the hand pies:
Place a generous spoonful of the beef mixture in the center of each pastry piece. Fold the pastry over the filling and press the edges firmly with a fork to seal. - Brush with egg:
Arrange the pies on a lined baking sheet. Brush the tops with beaten egg and sprinkle with sesame seeds if desired. Cut a small slit in each pie for steam to escape. - Bake:
Bake for 20–25 minutes, or until the pastry is puffed and golden brown. - Rest and serve:
Let the hand pies cool for 5 minutes before serving.
