Description

Ingredients

- Salt & pepper
Tzatziki Sauce:
- 1 cup Greek yogurt
- ½ cucumber (grated & squeezed dry)
- 2 garlic cloves (minced)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1–2 tbsp fresh dill (or mint)
- Salt to taste
Bowl Base & Toppings:
- Cooked rice, quinoa, or pita bread
- Cherry tomatoes (halved)
- Cucumber slices
- Red onion (thinly sliced)
- Lettuce or greens
- Feta cheese (crumbled)
- Olives (optional)
Instructions
1. Marinate the Chicken
- In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Add chicken and coat well.
- Cover and marinate for at least 30 minutes (or overnight for best flavor).
2. Cook the Chicken
- Thread onto skewers (optional).
- Grill or pan-cook over medium-high heat for 10–12 minutes, turning occasionally until cooked through and slightly charred.
3. Make the Tzatziki
- Combine all sauce ingredients in a bowl.
- Mix well and chill in the fridge for 15–30 minutes.
4. Assemble the Bowls
- Add your base (rice/quinoa/pita).
- Top with grilled chicken, veggies, feta, and olives.
- Drizzle generously with tzatziki.
