Pork Chops

  • 4 bone-in pork chops (1–1½ inches thick)

  • ½ tsp dried thyme or rosemary

  • 1 tbsp apple cider vinegar

Apple Chutney

  • 2 large apples (Granny Smith or Honeycrisp), peeled and diced

  • ½ small onion, finely chopped

  • â…“ cup brown sugar

  • ¼ cup apple cider vinegar

  • ¼ cup raisins or dried cranberries

  • 1 tsp grated fresh ginger

  • ½ tsp cinnamon

  • ¼ tsp ground cloves or allspice

  • Pinch of red pepper flakes (optional)

  • Salt to taste


Instructions

1. Make the Apple Chutney

  1. In a saucepan over medium heat, combine apples, onion, brown sugar, vinegar, raisins, ginger, cinnamon, cloves, and red pepper flakes.

  2. Bring to a simmer, then reduce heat to low.

  3. Cook uncovered for 20–25 minutes, stirring occasionally, until thick and jam-like.

  4. Season with salt and set aside (can be made ahead).


2. Prepare the Pork Chops

  1. Pat pork chops dry.

  2. In a small bowl, mix olive oil, garlic, salt, pepper, smoked paprika, thyme, and apple cider vinegar.

  3. Rub mixture all over pork chops.

  4. Let rest at room temperature for 20–30 minutes.


3. Grill the Pork Chops

  1. Preheat grill to medium-high (about 400°F / 200°C).

  2. Oil the grill grates.

  3. Grill pork chops for 4–5 minutes per side, until nicely charred and internal temperature reaches 145°F (63°C).

  4. Remove from grill and rest for 5 minutes.


4. Serve

  • Spoon warm apple chutney generously over grilled pork chops.

  • Garnish with fresh thyme or parsley if desired.

For extra depth of flavor, try brining the pork chops briefly before grilling to keep them juicy and tender. The apple chutney pairs beautifully with a touch of whole-grain mustard or a pinch of chili flakes for subtle heat.
