¼ cup raisins or dried cranberries

1 tsp grated fresh ginger

½ tsp cinnamon

¼ tsp ground cloves or allspice

Pinch of red pepper flakes (optional)

Instructions
1. Make the Apple Chutney

In a saucepan over medium heat, combine apples, onion, brown sugar, vinegar, raisins, ginger, cinnamon, cloves, and red pepper flakes.

Bring to a simmer, then reduce heat to low.

Cook uncovered for 20–25 minutes, stirring occasionally, until thick and jam-like.

Season with salt and set aside (can be made ahead).
2. Prepare the Pork Chops

Pat pork chops dry.

In a small bowl, mix olive oil, garlic, salt, pepper, smoked paprika, thyme, and apple cider vinegar.

Rub mixture all over pork chops.

Let rest at room temperature for 20–30 minutes.
3. Grill the Pork Chops

Preheat grill to medium-high (about 400°F / 200°C).

Oil the grill grates.

Grill pork chops for 4–5 minutes per side, until nicely charred and internal temperature reaches 145°F (63°C).

Remove from grill and rest for 5 minutes.
