The Ultimate Grilled Steak with Cowboy Butter Recipe

  • Author: David Andersson
  • Total Time: 20 minutes
  • Yield: 2 servings 1x

Description

Understanding this dish requires knowing what makes a grilled steak with cowboy butter unique. Quality beef needs little more than coarse salt and black pepper to taste great. Adding a compound spread melted over hot meat creates a rich sauce right on your cutting board.

Ingredients

Scale

For the Steak

  • 2 ribeye, sirloin, or strip steaks, about 1-inch thick
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • ½ tsp smoked paprika

For the Cowboy Butter

  • ½ cup (115 g) unsalted butter, softened
  • 2 cloves garlic, finely minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper
  • ½ tsp black pepper
  • ¼ tsp salt

Instructions

  • Prepare the cowboy butter:
Combine the softened butter, garlic, parsley, chives, Dijon mustard, lemon juice, smoked paprika, cayenne, black pepper, and salt. Mix until smooth. Refrigerate for at least 20 minutes to allow the flavors to develop.
  • Prepare the steaks:
Remove the steaks from the refrigerator about 30 minutes before grilling. Pat them dry and rub with olive oil. Season both sides with salt, black pepper, and smoked paprika.
  • Preheat the grill:
Heat the grill to high heat, around 450–500°F (230–260°C). Clean and lightly oil the grates.
  • Grill the steaks:
Place the steaks on the hot grill. Cook for approximately 4–5 minutes per side for medium-rare, depending on thickness. For greater accuracy, use a meat thermometer:
    • Rare: 125°F (52°C)
    • Medium-rare: 135°F (57°C)
    • Medium: 145°F (63°C)
    • Medium-well: 150°F (66°C)
    • Well-done: 160°F (71°C)
  • Rest:
Transfer the steaks to a cutting board and let them rest for 5–10 minutes.
  • Add the cowboy butter:
Place a generous spoonful of cowboy butter on each hot steak and let it melt over the surface.
  • Serve:
Slice against the grain and serve with extra cowboy butter on the side.

Notes

Serve with grilled vegetables, roasted potatoes, corn on the cob, or a fresh green salad for a complete meal.
