- 1 lb (450g) ground turkey
- 2 medium sweet potatoes (peeled & diced small)
- 1 small onion (chopped)
- 2–3 cloves garlic (minced)
- 1 bell pepper (any color, chopped)
- 1–2 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp chili powder (optional, for heat)
- Salt & pepper to taste
- ½ tsp dried oregano or thyme
- ¼ cup water or broth
- Optional toppings: chopped parsley, green onions, shredded cheese, or avocado
Instructions
- Cook the sweet potatoes
Heat 1 tbsp oil in a large skillet over medium heat.
Add diced sweet potatoes, season lightly with salt, and cook for 8–10 minutes, stirring occasionally until slightly tender. Remove and set aside. - Cook the turkey
In the same pan, add remaining oil. Cook ground turkey, breaking it up, until browned (5–7 minutes). - Add veggies & flavor
Add onion, garlic, and bell pepper. Cook for 3–4 minutes until softened. - Season it
Stir in paprika, cumin, chili powder, oregano, salt, and pepper. - Combine everything
Add sweet potatoes back to the pan. Pour in a little water/broth, cover, and cook another 5–7 minutes until potatoes are fully tender. - Finish & serve
Taste and adjust seasoning. Add toppings if you like.
