Description
The halal beef merguez sausage rolls recipe is a delicious fusion dish that marries Western bakery techniques with the intense, aromatic flavor profiles of traditional North African sausage making. At its core, the recipe features lean ground beef seasoned heavily with garlic, warm spices, and fiery red pepper paste, all neatly rolled inside thawed puff pastry sheets before being baked to perfection.
Ingredients
For the filling
- 500 g halal beef mince
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tbsp harissa paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground coriander
- ½ tsp chili flakes
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh cilantro or parsley, chopped
For the pastry
- 1 sheet ready-rolled puff pastry, thawed
- 1 egg, beaten
- 1 tbsp sesame seeds or nigella seeds
Instructions
- Prepare the filling:
In a large bowl, combine the halal beef mince, garlic, onion, harissa, cumin, paprika, coriander, chili flakes, salt, pepper, and fresh herbs. Mix until well combined. - Prepare the pastry:
Preheat the oven to 200°C (400°F). Place the puff pastry on a lightly floured surface and cut it lengthwise into 2 equal strips. - Add the beef mixture:
Divide the beef mixture into two portions. Shape each portion into a long sausage and place it along the center of each pastry strip. - Roll the pastry:
Brush one edge of the pastry with beaten egg. Fold the pastry over the beef and press the seam to seal. Place the rolls seam-side down. - Cut into pieces:
Cut each long roll into 6 pieces, giving you 12 sausage rolls. - Brush and garnish:
Place the rolls on a lined baking tray. Brush the tops with beaten egg and sprinkle with sesame or nigella seeds. - Bake:
Bake for 20–25 minutes, or until the pastry is puffed and golden brown and the beef is completely cooked. - Serve:
Allow the sausage rolls to cool for 5 minutes before serving.
Notes
For extra flavor, serve these sausage rolls with harissa yogurt, garlic sauce, or a fresh mint dip. You can also sprinkle them with sesame or nigella seeds before baking for added crunch and aroma.
