- ¼ cup chopped fresh cilantro
- 1 tbsp soy sauce
- 1 tsp sesame oil
- ½ tsp white pepper
- 30–35 round dumpling wrappers
For Cooking
- 2 tbsp vegetable oil
- ½ cup water
For the Dipping Sauce
- ¼ cup soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp chili crisp or chili flakes
- 1 green onion, finely chopped
- 1 tsp toasted sesame seeds
Instructions
Step 1: Cook the Short Ribs
- Heat olive oil in a Dutch oven or heavy pot over medium-high heat.
- Brown the beef short ribs on all sides.
- Add onion, garlic, and ginger, and cook until fragrant.
- Stir in soy sauce, oyster sauce, sesame oil, smoked paprika, black pepper, and beef broth.
- Cover and simmer on low heat for about 3 hours, or until the beef is fall-apart tender.
- Remove the bones and shred the meat finely.
- Allow the meat to cool.
Step 2: Prepare the Filling
- Sprinkle a little salt over the shredded cabbage and let sit for 10 minutes.
- Squeeze out as much moisture as possible.
- Mix the shredded beef with cabbage, green onions, cilantro, soy sauce, sesame oil, and white pepper until well combined.
Step 3: Assemble the Dumplings
- Place one dumpling wrapper on a clean surface.
- Add about 1 tablespoon of filling to the center.
- Lightly moisten the edges with water.
- Fold and pleat the wrapper to seal tightly.
- Repeat until all dumplings are assembled.
Step 4: Cook the Dumplings
- Heat vegetable oil in a large nonstick skillet over medium heat.
- Arrange dumplings in a single layer.
- Cook for 2–3 minutes until the bottoms are golden brown.
- Carefully pour in the water and immediately cover the pan.
- Steam for 6–8 minutes, or until the wrappers are tender and the water has evaporated.
- Remove the lid and cook for another minute to crisp the bottoms.
Step 5: Prepare the Dipping Sauce
- Combine soy sauce, rice vinegar, sesame oil, chili crisp, green onion, and sesame seeds in a small bowl.
- Stir well before serving.
