Description
At its core, this dish is a creative fusion that pairs West African suya with American slider culture. Halal Beef Suya Sliders feature thin, tender strips of halal beef that have been coated in a warm, pepper-heavy spice rub and quickly seared over intense heat. Instead of serving the steak on wooden skewers as tradition dictates on the streets of West Africa, the seared meat is piled high inside pillow-soft slider rolls.
Ingredients
For the beef
- 1 lb (450 g) halal beef, thinly sliced — sirloin, flank steak, or ribeye
- 2 tbsp vegetable oil
- 2 tbsp suya spice (yaji)
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp lemon juice
For the sliders
- 8–10 slider buns
- 1 small red onion, thinly sliced
- 1 tomato, thinly sliced
- Lettuce leaves
- 2 tbsp melted butter or garlic butter
Quick suya sauce
- ½ cup mayonnaise
- 1 tbsp suya spice
- 1 tsp lemon juice
- 1 tsp honey
- Pinch of salt
Instructions
- Marinate the beef:
Combine the beef with oil, suya spice, paprika, garlic powder, onion powder, salt, pepper, and lemon juice. Mix well and marinate for at least 30 minutes, or up to overnight in the refrigerator. - Cook the beef:
Heat a skillet or grill pan over high heat. Cook the beef in batches for about 2–4 minutes per side, depending on thickness, until browned and cooked through. Avoid overcrowding the pan. - Make the sauce:
Mix mayonnaise, suya spice, lemon juice, honey, and salt. Taste and adjust the spice level. - Toast the buns:
Brush the cut sides of the slider buns with melted butter. Toast them in a skillet or under the broiler until lightly golden. - Assemble:
Spread suya sauce on the bottom bun. Add lettuce, a generous portion of spicy beef, sliced tomato, and red onion. Add another drizzle of sauce and place the top bun over it. - Serve:
Sprinkle a little extra suya spice over the beef just before serving.
Notes
For the best flavor, marinate the beef overnight and adjust the suya spice to your preferred level of heat. Serve the sliders fresh with extra suya spice and your favorite toppings for an authentic Nigerian-inspired twist.
