For the Tart

  • 1 sheet (about 10 oz/280 g) puff pastry, thawed
  • 2 tablespoons olive oil
  • 1 pound (450 g) halal chicken breast, diced
  • 8 ounces (225 g) button or cremini mushrooms, sliced
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ½ cup (120 ml) heavy cream
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)

  • Fresh parsley, chopped
  • Fresh thyme leaves (optional)

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper.
  • Cook the filling: Heat olive oil in a skillet over medium-high heat. Cook the diced chicken for 5–6 minutes until lightly browned. Remove and set aside.
  • In the same skillet, sauté the onion for 2 minutes, then add the mushrooms and cook until their moisture evaporates, about 6–8 minutes. Stir in the garlic, thyme, paprika, salt, and pepper.
  • Return the chicken to the skillet. Pour in the heavy cream and simmer for 2–3 minutes until slightly thickened. Remove from the heat and let cool for 10 minutes.
  • Prepare the pastry: Unfold the puff pastry onto the prepared baking tray. Score a 1-inch border around the edges without cutting all the way through. Prick the center with a fork.
  • Spread the chicken and mushroom filling evenly inside the border. Sprinkle the mozzarella and Parmesan over the top.
  • Brush the pastry border with the beaten egg.
  • Bake for 25–30 minutes, or until the pastry is puffed and golden brown and the cheese is bubbly.
  • Let the tart cool for 5 minutes before slicing. Garnish with chopped parsley and fresh thyme, if desired.
