The Ultimate Halal Chorizo and Cheddar Cornbread Recipe

  • Author: David Andersson
  • Total Time: 40 minutes
  • Yield: 8 servings 1x

Description

To appreciate this dish, it helps to understand how it transforms traditional breadmaking. Standard cornbread relies on a basic mixture of cornmeal, flour, milk, and butter to build a simple golden loaf. This recipe takes that familiar base and turns it into a full flavor experience by adding bold savory ingredients directly into the batter.

Ingredients

Scale
  • 1 cup (120 g) yellow cornmeal
  • 1 cup (125 g) all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup (240 ml) buttermilk
  • ¼ cup (60 ml) melted butter
  • 1 tbsp honey
  • 1 cup (150 g) halal chorizo, cooked and crumbled
  • 1 cup (100 g) shredded sharp cheddar cheese
  • ½ cup (80 g) sweet corn, drained
  • 1 small jalapeño, finely chopped (optional)
  • 2 tbsp chopped green onions
  • ½ tsp smoked paprika

Instructions

  • Preheat the oven:
Heat your oven to 400°F (200°C). Grease a 9-inch (23 cm) cast-iron skillet or baking pan.
  • Cook the chorizo:
Cook the halal chorizo in a skillet over medium heat until browned and fully cooked. Drain excess oil and set aside.
  • Mix the dry ingredients:
In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and smoked paprika.
  • Mix the wet ingredients:
In another bowl, whisk the eggs, buttermilk, melted butter, and honey until well combined.
  • Combine:
Pour the wet mixture into the dry ingredients. Stir gently until just combined—don’t overmix.
  • Add the fillings:
Fold in the cooked chorizo, cheddar cheese, corn, jalapeño, and green onions.
  • Bake:
Pour the batter into the prepared skillet or pan and spread evenly. Bake for 20–25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Cool and serve:
Let the cornbread cool for about 10 minutes before slicing. Serve warm.

Notes

For extra flavor, brush the warm cornbread with melted butter and sprinkle with a little cheddar and green onion. Serve alongside Brunswick Stew, chili, or barbecue for a hearty Southern-inspired meal.
