  • ¼ cup chopped fresh parsley

For the Tzatziki Dressing

  • 1 cup plain Greek yogurt
  • ½ cup grated cucumber, squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp chopped fresh dill (or mint)
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions

  • In a bowl, combine the olive oil, paprika, cumin, coriander, garlic powder, onion powder, oregano, salt, pepper, and lemon juice. Add the chicken and toss well. Marinate for at least 20 minutes.
  • Heat a large skillet over medium-high heat. Cook the chicken for 6–8 minutes, stirring occasionally, until browned and fully cooked.
  • While the chicken cooks, whisk together all the tzatziki dressing ingredients until smooth. Refrigerate until ready to use.
