Description

At its core, this dish is a delicious adaptation of the classic sausage roll, which is traditionally popular across the United Kingdom, Australia, and New Zealand. While traditional versions often rely on minced pork, this recipe swaps the meat for premium, seasoned ground lamb, ensuring it is entirely halal.

  • 1 lb (450 g) halal ground lamb
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp ground coriander
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tbsp Worcestershire sauce (halal-certified) or 1 tsp soy sauce
  • 2 tbsp breadcrumbs
  • 1 egg

For the Pastry

  • 2 sheets puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1 tbsp sesame seeds or nigella seeds (optional)

Instructions

1. Prepare the Filling

  1. In a large bowl, combine the ground lamb, onion, garlic, parsley, cumin, paprika, coriander, salt, pepper, Worcestershire sauce (or soy sauce), breadcrumbs, and egg.
  2. Mix gently until everything is evenly combined. Avoid overmixing to keep the filling tender.

2. Prepare the Pastry

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking tray with parchment paper.
  3. Cut each puff pastry sheet in half lengthwise to make four long strips.

3. Assemble the Rolls

  1. Divide the lamb mixture into four equal portions.
  2. Shape each portion into a long log and place it along one edge of each pastry strip.
  3. Brush the opposite edge with a little beaten egg.
  4. Roll the pastry tightly around the filling and seal the edge.
  5. Place the rolls seam-side down.
  6. Cut each long roll into 3–4 smaller pieces.
  7. Brush the tops with egg wash and sprinkle with sesame or nigella seeds if desired.

4. Bake

  1. Arrange the sausage rolls on the prepared baking tray, leaving a little space between each.
  2. Bake for 25–30 minutes, or until the pastry is puffed and golden and the lamb is fully cooked (internal temperature should reach 160°F/71°C).
