Description
At its core, halal marshmallow rocky road bark is a simple, no-bake confection made by combining rich melted chocolate with soft marshmallows, crunchy roasted nuts, and crispy biscuit pieces. Once everything is mixed together, the sweet mixture is spread into a flat layer, allowed to set until solid, and then broken or sliced into rustic, bite-sized bark pieces.
Ingredients
- 12 oz (340 g) halal milk or dark chocolate, chopped
- 1 tbsp coconut oil or unsalted butter (optional, for a smoother texture)
- 1½ cups halal mini marshmallows
- ¾ cup roasted almonds or walnuts, roughly chopped
- ¼ cup crushed digestive biscuits or graham crackers (optional)
- 2 tbsp dried cranberries or raisins (optional)
- Pinch of sea salt
Instructions
- Line a small baking tray or plate with parchment paper.
- Melt the chocolate with the coconut oil or butter in the microwave (30-second intervals) or over a double boiler until smooth.
- Let the chocolate cool for 2–3 minutes so it doesn’t completely melt the marshmallows.
- Fold in the marshmallows, nuts, biscuits, and dried fruit until everything is coated.
- Spread the mixture into an even layer about ½ inch (1–1.5 cm) thick.
- Sprinkle a few extra marshmallows and nuts on top, gently pressing them into the chocolate.
- Refrigerate for 1–2 hours, or until firm.
- Break into rustic pieces or cut into squares and enjoy.
Notes
This no-bake treat is easy to customize with your favorite halal-friendly mix-ins like pistachios, pecans, dried cranberries, or crushed biscuits. Keep it chilled until ready to serve for the perfect crisp chocolate and chewy marshmallow texture.
