Description
A halal sardine nicoise-style salad is a modern, halal-conscious interpretation of the famous French Nicoise salad originating from the coastal city of Nice. While the conventional version traditionally features canned or seared tuna, this unique twist spotlights canned sardines certified under halal guidelines. Sardines bring a richer, more robust flavor along with an incredible abundance of healthy omega-three fatty acids, vitamins, and minerals.
Ingredients
For the Salad:
- 2 cans (about 120 g each) halal-certified sardines, drained
- 300 g baby potatoes, halved
- 150 g green beans, trimmed
- 2 large eggs
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- ¼ red onion, thinly sliced
- ½ cup Kalamata or black olives
- 2 cups mixed lettuce or salad greens
- 2 tbsp fresh parsley, chopped
For the Dressing:
- 3 tbsp extra-virgin olive oil
- 1½ tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 small garlic clove, minced
- ½ tsp dried oregano
- ¼ tsp black pepper
- ¼ tsp salt
Instructions
- Cook the potatoes: Place the potatoes in a pot of salted water and boil for about 10–12 minutes, or until fork-tender. Drain and let cool slightly.
- Blanch the green beans: Cook the green beans in boiling water for 3–4 minutes until bright green and tender-crisp. Drain and rinse under cold water.
- Cook the eggs: Place the eggs in a saucepan, cover with water, and bring to a boil. Cook for about 9–10 minutes. Cool in ice water, peel, and halve.
- Make the dressing: Whisk together olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and black pepper.
- Assemble: Arrange the lettuce on a large serving plate. Add potatoes, green beans, tomatoes, cucumber, red onion, olives, and eggs.
- Add the sardines: Place the drained sardines over the salad and drizzle everything generously with the dressing.
- Garnish and serve: Sprinkle with fresh parsley and serve immediately.
Notes
Choose sardines packed in olive oil for a richer flavor. For a halal preparation, check the sardine and Dijon mustard labels for halal certification and avoid any dressing or condiment containing non-halal ingredients.
