For the Date Caramel Filling

  • 2 cups Medjool dates, pitted
  • ½ cup full-fat coconut milk
  • 2 tbsp almond butter
  • 1 tsp vanilla extract
  • ¼ tsp sea salt

For the Chocolate Topping

  • ¾ cup dark chocolate chips
  • 2 tbsp coconut milk
  • 1 tsp coconut oil

Optional Garnishes

  • Chopped pistachios
  • Flaky sea salt
  • Extra chopped Medjool dates
  • Shredded coconut

Instructions

  • Prepare the crust: Preheat the oven to 350°F (175°C). Mix almond flour, oats, pecans, coconut oil, maple syrup, vanilla, and salt until the mixture holds together.
  • Bake: Press the mixture firmly into a 9-inch tart pan. Bake for 12–15 minutes until lightly golden. Cool completely.
  • Make the date caramel: Soak the Medjool dates in warm water for 10 minutes if they are firm, then drain. Blend with coconut milk, almond butter, vanilla, and salt until smooth and creamy.
  • Fill the tart: Spread the date caramel evenly over the cooled crust.
  • Prepare the topping: Melt the dark chocolate with coconut milk and coconut oil until smooth. Pour over the caramel layer and spread evenly.
  • Chill: Refrigerate for at least 2 hours, or until the chocolate is set.
  • Garnish and serve: Sprinkle with chopped pistachios, flaky sea salt, shredded coconut, or extra chopped dates before slicing.
