Ingredients
Shrimp
1 lb (450 g) large shrimp, peeled & deveined
Salt & black pepper, to taste
1 tbsp oil (vegetable or sesame)
Honey Garlic Sauce
3 tbsp honey
3 tbsp soy sauce (or tamari)
1 tbsp rice vinegar or lime juice
1 tsp sesame oil
3 cloves garlic, minced
½ tsp grated fresh ginger (optional)
Fried Rice
3 cups cooked jasmine rice, cold
2 eggs, lightly beaten
½ cup frozen peas and carrots
3 green onions, sliced
2 tbsp oil
1–2 tbsp soy sauce (to taste)
Optional Garnish
Sesame seeds
Red pepper flakes
Instructions
Make Sauce:
Whisk honey, soy sauce, vinegar, sesame oil, garlic, and ginger. Set aside.Cook Shrimp:
Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Season shrimp lightly.
Cook 1–2 minutes per side until pink. Remove and set aside.Scramble Eggs:
Add 1 tbsp oil to the pan. Pour in eggs, scramble gently, then remove.Fry Rice:
Add remaining oil. Stir-fry peas and carrots 1 minute.
Add rice, breaking up clumps. Cook 3–4 minutes until hot and lightly crisped.Combine:
Return eggs and shrimp to the pan. Pour in honey garlic sauce and soy sauce.
Toss well and cook 1–2 minutes until everything is coated and shrimp are heated through.Finish:
Stir in green onions. Taste and adjust seasoning.
