Ultimate Hot Honey Cornbread with Whipped Feta Recipe

  • Author: David Andersson
  • Total Time: 40 minutes
  • Yield: 9 servings 1x

Description

At its core, this extraordinary creation is a multi-layered pastry dish that transforms traditional golden bread into a sophisticated, cafe-quality center-piece. It elevates humble ingredients through clever textural contrasts and bold flavor pairings.

Ingredients

Scale

For the Cornbread

  • 150 g cornmeal
  • 120 g all-purpose flour
  • 2 tbsp granulated sugar
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 180 ml buttermilk
  • 80 g unsalted butter, melted
  • 120 g canned or fresh sweet corn, drained
  • 1 tbsp honey

For the Whipped Feta

  • 150 g feta cheese
  • 80 g Greek yogurt
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • ½ tsp honey
  • Black pepper, to taste

For the Hot Honey

  • 60 g honey
  • ½–1 tsp chili flakes
  • ½ tsp hot sauce (optional)
  • 1 tsp apple cider vinegar or lemon juice

For Garnish

  • Fresh thyme or parsley
  • Extra corn kernels
  • Chili flakes
  • A little flaky sea salt

Instructions

1. Prepare the batter
Preheat the oven to 200°C / 400°F. Grease an 8-inch (20 cm) square baking pan or cast-iron skillet.

In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk the eggs, buttermilk, melted butter, and honey. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the sweet corn.

2. Bake the cornbread
Pour the batter into the prepared pan and smooth the top. Bake for 20–25 minutes, or until golden and a toothpick inserted in the center comes out clean.

Let it cool for about 10 minutes.

3. Make the whipped feta
Add feta, Greek yogurt, olive oil, lemon juice, honey, and black pepper to a food processor. Blend until smooth and creamy.

4. Make the hot honey
Warm the honey gently in a small saucepan or microwave. Stir in chili flakes, hot sauce if using, and apple cider vinegar or lemon juice.

5. Assemble
Spread the whipped feta generously over the warm cornbread. Drizzle with hot honey and sprinkle with fresh herbs, chili flakes, and a little flaky sea salt.

Notes

For the best flavor, use good-quality feta and fresh corn when available. Add the hot honey just before serving so the cornbread stays moist while the whipped feta remains creamy. Adjust the chili flakes to make it as mild or spicy as you like.
