For the pudding

  • 2 cups (480 ml) whole milk
  • 1 cup (240 ml) heavy cream
  • ⅓ cup brown sugar
  • 2 tbsp granulated sugar
  • 2 tsp unflavored gelatin (or 1 packet, about 7 g)
  • 3 tbsp cold water
  • 1 tsp vanilla extract
  • Pinch of salt

For the brown sugar boba

  • 1 cup cooked black tapioca pearls
  • ¼ cup dark brown sugar
  • ¼ cup water

For serving

  • Ice cubes
  • ½ cup chilled milk or brewed black milk tea
  • Extra brown sugar syrup (optional)
  • Whipped cream (optional)

Instructions

1. Make the pudding

  1. Sprinkle the gelatin over the cold water and let it bloom for 5 minutes.
  2. In a saucepan, combine the milk, cream, brown sugar, granulated sugar, and salt.
  3. Heat over medium until steaming (do not boil).
  4. Remove from heat and stir in the bloomed gelatin until completely dissolved.
  5. Add vanilla.
  6. Pour into serving bowls and refrigerate for at least 4 hours, or until set.

2. Prepare the boba

  1. Cook tapioca pearls according to the package directions.
  2. In a small saucepan, combine the brown sugar and water.
  3. Simmer for 2–3 minutes.
  4. Stir in the cooked boba and cook another 2–3 minutes until glossy and coated.

3. Assemble

  1. Add a handful of ice cubes around or beside the chilled pudding.
  2. Spoon the warm brown sugar boba over the pudding.
  3. Pour a little chilled milk or milk tea around the pudding for an “iced tea bowl” effect.
  4. Drizzle with extra brown sugar syrup if desired.
  5. Top with whipped cream for an extra indulgent dessert.

Notes

For the best texture, enjoy this dessert the same day it’s assembled, as boba pearls tend to harden after refrigeration. Serve immediately for the perfect combination of creamy pudding, chewy boba, and refreshing iced milk tea.
