Brown sugar contains natural molasses, which provides a caramel depth that white granulated sugar simply cannot replicate.

  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda

  • ½ cup unsalted butter, softened
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup oat milk
  • 2 tablespoons strong brewed espresso or cooled espresso
  • 2 tablespoons neutral oil

For the Brown Sugar Espresso Syrup

  • ¼ cup packed brown sugar
  • ¼ cup water
  • 1 tablespoon espresso or strong coffee
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract

For the Oatmilk Frosting

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons oat milk
  • 1 tablespoon espresso or strong coffee, cooled
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • Pinch of salt

For Topping

  • 1–2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • Optional: a light drizzle of espresso syrup

Instructions

  • Prepare the oven
    Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.
  • Mix the dry ingredients
    Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a medium bowl.
  • Cream the butter and sugar
    Beat the softened butter, brown sugar, and granulated sugar for 2–3 minutes until light and fluffy.
  • Add the wet ingredients
    Beat in the eggs one at a time, followed by the vanilla. Mix in the oil.
  • Combine
    Stir the espresso into the oat milk. Add the dry ingredients to the butter mixture in alternating additions with the oat milk mixture. Mix just until combined; don’t overmix.
  • Bake
    Divide the batter evenly among the cupcake liners, filling each about ⅔ full. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  • Make the espresso syrup
    Combine brown sugar and water in a small saucepan. Heat over medium heat until the sugar dissolves. Remove from heat and stir in espresso, cinnamon, and vanilla. Cool.
  • Make the frosting
    Beat the butter until creamy. Gradually add powdered sugar. Add oat milk, espresso, vanilla, cinnamon, and salt. Beat for another 2–3 minutes until fluffy. Add a little more oat milk if needed.
  • Assemble
    Once the cupcakes are completely cool, brush or drizzle each with a small amount of espresso syrup. Pipe the frosting on top.
  • Finish
    Mix the brown sugar and cinnamon and sprinkle lightly over the frosting. For an extra coffee-shop-style finish, drizzle with a little more espresso syrup.

Notes

For the strongest brown sugar shaken-espresso flavor, use freshly brewed espresso and let it cool completely before adding it to the batter or frosting.
