Description

To truly appreciate this dish, it helps to understand what makes it so unique. At its core, this recipe is a modern, coffee-infused twist on traditional baked oatmeal. Baked oatmeal itself is a beloved breakfast casserole made by combining rolled oats with leavening agents, spices, liquid binders, and sweeteners, then baking the mixture until it sets into a sliceable, comforting texture. Unlike regular oatmeal, which can be mushy or gooey, a good bake has structure, looking and feeling almost like a healthy breakfast cake or a soft bread pudding.

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Pinch of salt
  • 2 tbsp instant espresso powder
  • 2 eggs
  • 1 3/4 cups oat milk
  • 1/3 cup brown sugar
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp melted butter or coconut oil

For the topping

  • Ice cubes
