For the Lemon Icing
- 1 cup (120g) powdered sugar
- 2–3 tbsp fresh lemon juice
- 1 tsp lemon zest (optional)
Instructions
1. Prepare the Pan
- Preheat oven to 350°F (175°C).
- Grease and line a 9×5-inch loaf pan with parchment paper.
2. Make the Batter
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in lemon zest, lemon juice, and vanilla extract.
- Alternately add the dry ingredients and milk, beginning and ending with the dry ingredients.
- Toss raspberries with 1 tablespoon flour and gently fold them into the batter.
3. Bake
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
4. Make the Icing
- Whisk together powdered sugar and lemon juice until smooth.
- Adjust consistency with more lemon juice if needed.
- Drizzle over the cooled loaf and let set for 10–15 minutes before slicing.
