Strawberry layer

  • ½ cup fresh strawberries, chopped
  • 12 tbsp sugar or honey
  • 1 tsp lemon juice

Matcha latte

  • 2 tbsp hot water (about 70–80°C / 160–175°F)
  • ¾ cup oat milk
  • ½ cup ice

Oat milk foam

  • ¼ cup cold oat milk
  • 12 tsp maple syrup or vanilla syrup
  • ¼ tsp vanilla extract — optional

Instructions

  • Make the strawberry puree:
    Blend or mash the strawberries with sugar and lemon juice until mostly smooth. For a smoother drink, strain out the seeds.
  • Prepare the matcha:
    Sift the matcha into a small bowl. Add the hot water and whisk vigorously until smooth and slightly frothy. Avoid boiling water, which can make matcha bitter.
  • Make the oat foam:
    Froth the cold oat milk with maple/vanilla syrup until thick and foamy. A handheld milk frother works particularly well.
  • Build the drink:
    Add the strawberry puree to a tall glass. Fill with ice, then slowly pour in the oat milk.
  • Add the matcha:
    Slowly pour the whisked matcha over the oat milk to create the beautiful layered effect.
  • Top with foam:
    Spoon the oat-milk foam generously over the top.
