Ingredients
For the Ube Lavender Latte
- 1 shot espresso, freshly brewed and cooled slightly
- 1 cup oat milk, chilled
- 1 tablespoon ube halaya or ube puree
- 1–2 teaspoons lavender syrup
- 1 teaspoon maple syrup or honey, optional
- 1 cup ice cubes
- ½ teaspoon vanilla extract, optional
- Dried culinary lavender, for garnish, optional
Instructions
Add the ube halaya or ube puree to a small glass or bowl. Stir in the lavender syrup and vanilla extract until smooth.
If the ube is very thick, mix it with a tablespoon of warm oat milk to create a smoother mixture.
Fill a tall glass with ice.
Pour the ube-lavender mixture over the ice and add the chilled oat milk. Stir gently until the ube is evenly distributed.
Slowly pour the freshly brewed espresso over the oat milk. This creates beautiful layers of purple, creamy white, and coffee brown.
Give the drink a gentle stir before drinking.
Finish with a small sprinkle of culinary lavender or a little ube on top.
