Jack-o’-Lantern Quesadillas

Description

The Jack-o’-Lantern Quesadillas recipe is a creative holiday adaptation of the classic Mexican quesadilla. Standard quesadillas feature flat flour or corn tortillas folded over melted cheese, meats, and spices before being toasted on a hot griddle. This festive version uses two whole tortillas stacked on top of one another to build a round, pie-like structure.

Ingredients

Scale

For the quesadillas

  • 4 medium flour tortillas

  • 1½ cups (150 g) shredded cheddar or mozzarella cheese

  • ½ cup cooked chicken, shredded (optional)

  • ¼ cup finely chopped bell pepper

  • ¼ cup finely chopped onion

  • 2 tablespoons sweet corn

  • 1 tablespoon olive oil or butter

  • ½ teaspoon paprika

  • ¼ teaspoon garlic powder

  • Salt and black pepper, to taste

For the pumpkin faces

  • 1 small orange bell pepper, cut into thin strips (optional)

  • Extra cheddar cheese, as needed

  • Salsa or sour cream, for serving

Instructions

1. Prepare the filling. In a bowl, combine the shredded cheese, bell pepper, onion, corn, paprika, garlic powder, salt, and black pepper. Add the cooked shredded chicken if desired.

2. Create the jack-o’-lantern faces. Take two tortillas and use a small knife to cut out pumpkin eyes, a triangular nose, and a jagged mouth. These will be the top tortillas.

3. Assemble the quesadillas. Place one uncut tortilla on a flat surface. Spread the filling evenly over it, leaving a small border around the edges. Place the face-cut tortilla on top.

4. Heat the pan. Warm a nonstick skillet over medium-low heat and lightly grease it with olive oil or butter.

5. Cook until crispy. Carefully place each assembled quesadilla in the skillet. Cook for 2–4 minutes per side, until the tortilla is golden and the cheese has melted. Flip gently using a wide spatula.

6. Make the faces stand out. Let the quesadillas rest for 1–2 minutes. The melted cheese visible through the cutouts will create a bright, spooky pumpkin-face effect.

7. Serve. Cut into wedges if desired and serve warm with salsa, sour cream, or guacamole.

Notes

Serve immediately while the cheese is warm and stretchy, alongside salsa and guacamole for a festive Halloween snack! 🎃
