Description
The Jam-Filled Holiday Cookies recipe represents a classic European-style sandwich cookie that combines delicate butter dough with a sweet fruit preserve center. Often referred to as linzer-style cutout treats, these cookies feature two distinct layers brought together with rich jam.
Ingredients
For the cookies
-
2½ cups (315 g) all-purpose flour
-
¾ cup (170 g) unsalted butter, softened
-
⅔ cup (80 g) powdered sugar
-
1 large egg yolk
-
1 tsp vanilla extract
-
¼ tsp almond extract (optional)
-
¼ tsp salt
-
1–2 tbsp milk, if needed
For the filling and decoration
-
½ cup (160 g) strawberry, raspberry, or apricot jam
-
2–3 tbsp powdered sugar, for dusting
Instructions
Step 1: Prepare the dough
-
In a large mixing bowl, beat the softened butter and powdered sugar until light and creamy.
-
Add the egg yolk, vanilla extract, and optional almond extract. Mix until smooth.
-
In a separate bowl, combine the flour and salt.
-
Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
-
If the dough is too crumbly, add milk a teaspoon at a time.
-
Shape the dough into a disc, wrap it, and refrigerate for 30 minutes.
Step 2: Shape the cookies
-
Preheat the oven to 175°C (350°F). Line a baking sheet with parchment paper.
-
Roll the chilled dough on a lightly floured surface to about ¼ inch (6 mm) thick.
-
Cut out 48 shapes using a round or festive cookie cutter. For half of the cookies, cut a small star or circle in the center to create a window.
-
Arrange the cookies on the baking sheet, leaving about 1 inch between them.
Step 3: Bake
-
Bake for 10–15 minutes, depending on the size, until the edges are lightly golden.
-
Let the cookies cool on the tray for 5 minutes.
-
Transfer to a wire rack and cool completely.
Step 4: Add the jam filling
-
Stir the jam until smooth. If it is very thick, warm it gently for a few seconds, then let it cool slightly.
-
Spread approximately 1 teaspoon of jam onto the flat side of each whole cookie.
-
Lightly dust the window cookies with powdered sugar.
-
Place a window cookie on top of each jam-covered cookie, pressing gently to sandwich them together.
-
Allow the jam to settle before serving.
Notes
Arrange the cookies on a festive platter with gingerbread, butter cookies, and chocolate treats. They also make lovely homemade Christmas gifts when packed in decorative tins or gift boxes.
