For the Keema Filling

  • 500 g minced beef or chicken
  • 2 tbsp cooking oil
  • 1 medium onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 green chilies, finely chopped
  • 1 medium tomato, finely chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • ½ tsp garam masala
  • ½ tsp black pepper
  • Salt, to taste
  • ½ cup fresh coriander, chopped
  • 1 tbsp lemon juice

For the Paratha

  • 2 cups all-purpose flour
  • ½ tsp salt
  • 1 tbsp oil or melted ghee
  • Water, as needed
  • Oil or ghee, for cooking

For the Roll

  • Sliced onion
  • Cucumber or shredded cabbage
  • Fresh coriander
  • Green chutney
  • Mayonnaise or yogurt sauce
  • Lemon wedges

Instructions

1. Prepare the keema

Heat oil in a pan over medium heat. Add the onion and cook until lightly golden.

Add ginger-garlic paste and green chilies. Fry for about 1 minute.

Add the minced meat and cook, breaking it up with a spoon, until it changes color and most of the moisture evaporates.

Add tomato, cumin, coriander, turmeric, chili powder, salt, and black pepper. Mix well.

Cover and cook for 10–15 minutes, or until the meat is completely cooked and tender. If necessary, add a few tablespoons of water while cooking.

Remove the lid and cook on high heat until the filling becomes fairly dry. Stir in garam masala, coriander, and lemon juice. Set aside to cool slightly.

2. Make the parathas

Mix flour and salt in a bowl. Add oil/ghee and enough water to make a soft dough.

Knead for about 5–7 minutes, then cover and rest for 20–30 minutes.

Divide the dough into balls. Roll each one into a thin circle.

Heat a little oil or ghee in a skillet and cook each paratha on both sides until golden and flaky.

3. Assemble the rolls

Place a hot paratha on a plate.

Spread a little green chutney and mayonnaise/yogurt sauce over it.

Add a generous layer of keema down the center. Top with sliced onion, cucumber/cabbage, and fresh coriander.

Drizzle with lemon juice and roll tightly.

Wrap the bottom half in parchment paper or foil to make it easier to eat.
