Description

  • 1012 corn tortillas, cut into quarters
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1½ cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp butter or oil
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Sauté the vegetables: Melt the butter in a skillet over medium heat. Add the onion and bell pepper and cook for 4–5 minutes until softened.
  • Make the sauce: Stir in the diced tomatoes with green chiles, cream of chicken soup, cream of mushroom soup, and chicken broth. Add chili powder, cumin, garlic powder, salt, and pepper. Cook for 3–4 minutes, stirring until smooth.
  • Layer the casserole: Spread a little sauce in the bottom of the baking dish. Add a layer of tortillas, followed by shredded chicken, sauce, and cheese.
  • Repeat: Continue layering until all the ingredients are used, finishing with sauce and cheese on top.
  • Bake: Cover with foil and bake for 25 minutes. Remove the foil and bake for another 10–15 minutes, until hot and bubbly and the cheese is golden.
  • Rest and serve: Let the casserole rest for 5–10 minutes before serving.

Notes

Rotisserie chicken works especially well for this recipe and makes preparation quick and easy.
