Description
At its core, lamb mandi with fragrant basmati rice is a celebrated traditional Arabian dish consisting of exceptionally tender, spice-marinated meat served over a bed of long-grain rice cooked in whole aromatic spices. Unlike standard rice and meat platters, authentic mandi relies on a gentle slow-cooking technique paired with a final smoking step that imparts a faint, savory wood-fire aroma.
Ingredients
For the Lamb
- 1.5 kg halal lamb shoulder or leg, cut into large pieces
- 2 tbsp olive oil
- 2 tsp salt
- 1½ tsp ground cumin
- 1½ tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp ground cardamom
- 1 tsp smoked paprika
- ½ tsp turmeric
- ½ tsp black pepper
- ½ tsp ground cloves
- 4 garlic cloves, minced
- 1 tbsp lemon juice
For the Fragrant Rice
- 3 cups basmati rice
- 4½ cups lamb or chicken stock
- 1 large onion, finely sliced
- 2 tbsp ghee or butter
- 4 cardamom pods
- 1 cinnamon stick
- 4 whole cloves
- 2 bay leaves
- ½ tsp cumin seeds
- ½ tsp turmeric
- Salt to taste
- ¼ cup raisins, optional
- ¼ cup toasted almonds, optional
For the Mandi Sauce
- 2 tomatoes, chopped
- 1 small onion, chopped
- 1 green chili
- 2 tbsp fresh cilantro
- 1 tbsp lemon juice
- Salt to taste
For the Smoky Finish
- 1 small piece of charcoal
- 1 tsp ghee or oil
Instructions
Combine the olive oil, salt, cumin, coriander, cinnamon, cardamom, paprika, turmeric, black pepper, cloves, garlic, and lemon juice.
Rub the mixture thoroughly over the lamb. Cover and refrigerate for 1–2 hours, or overnight for deeper flavor.
Preheat the oven to 180°C / 350°F.
Place the marinated lamb in a covered roasting dish with about ½ cup of water or stock. Cover tightly with foil or a lid.
Roast for approximately 1½–2 hours, or until the lamb is very tender.
Remove the cover during the final 15–20 minutes to allow the lamb to brown.
Rinse the basmati rice several times until the water runs mostly clear. Soak for 20–30 minutes, then drain.
Heat the ghee in a large pot. Add the onion and cook until softened and lightly golden.
Add the cardamom, cinnamon, cloves, bay leaves, and cumin seeds. Cook for about 30 seconds until fragrant.
Add the drained rice, turmeric, and salt. Stir gently to coat the rice with the spices.
Pour in the stock and bring to a boil. Reduce the heat to low, cover, and cook for 15–18 minutes, until the rice is tender and the liquid has been absorbed.
Let the rice rest, covered, for 10 minutes before fluffing with a fork.
Blend or finely chop the tomatoes, onion, green chili, cilantro, lemon juice, and salt.
Adjust the chili and lemon according to taste.
For a traditional smoky aroma, place a small piece of hot charcoal in a heatproof bowl or piece of foil and place it on top of the cooked rice.
Drizzle the charcoal with a teaspoon of ghee or oil and immediately cover the pot with a tight-fitting lid.
Let it smoke for 3–5 minutes, then carefully remove the charcoal and discard it safely.
Spread the fragrant rice over a large serving platter.
Arrange the tender lamb pieces on top and garnish with toasted almonds and raisins if desired.
Serve hot with the fresh Mandi sauce and lemon wedges.
