Leftover Spaghetti Halal Beef Frittata

Description

At its core, a frittata is an Italian style open faced omelet that starts on the stovetop and finishes baking in the oven. While traditional egg dishes feature vegetables, herbs, or small amounts of cured meat, a pasta frittata incorporates cooked long noodles directly into the custard base. When you add halal ground beef to the mix, you turn a light egg bite into a filling, wholesome meal.

  • 8 oz (225 g) leftover cooked spaghetti (plain or lightly sauced)
  • 8 oz (225 g) halal ground beef
  • 1 tbsp olive oil
  • ½ small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 6 large eggs
  • ¼ cup (60 ml) milk
  • ¾ cup (75 g) shredded mozzarella cheese
  • ¼ cup (25 g) grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh basil (optional)
  • 1 tbsp butter (for greasing the skillet)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Heat the olive oil in an oven-safe skillet over medium heat. Cook the onion until softened, about 3–4 minutes.
  • Add the garlic and halal ground beef. Cook until the beef is browned, breaking it into small pieces. Stir in the Italian seasoning, smoked paprika, salt, and pepper. Remove from heat.
  • In a large bowl, whisk together the eggs, milk, mozzarella, Parmesan, parsley, and basil.
  • Add the leftover spaghetti and cooked beef mixture to the egg mixture. Toss until the spaghetti is evenly coated.
  • Butter the skillet (or use the same skillet if oven-safe), then pour in the mixture and spread evenly.
  • Cook over medium heat for 2–3 minutes until the edges begin to set.
  • Transfer the skillet to the oven and bake for 15–20 minutes, or until the center is set and the top is lightly golden.
  • Let the frittata rest for 5 minutes before slicing.
  • Garnish with extra parsley and Parmesan, if desired, and serve warm.

Notes
