Ingredients
For the Shrimp:
1 lb (450 g) raw shrimp, peeled & deveined
2 tbsp fresh lime juice (about 1 lime)
1 tbsp olive oil or avocado oil
2 cloves garlic, minced
1/2 tsp ground cumin
1/2 tsp chili powder or paprika
1/4 tsp sea salt
Optional: pinch cayenne pepper for spice
For the Mango Salsa:
1 ripe mango, diced
1/2 red bell pepper, diced
1/4 cup red onion, finely chopped
1 small jalapeño, seeded & minced (optional)
2 tbsp fresh cilantro, chopped
Juice of 1/2 lime
Pinch of salt
For Serving:
8 small tortillas (corn, cassava, almond flour, etc.)
Shredded cabbage or lettuce
Lime wedges
Optional toppings:
Avocado slices or guacamole
Dairy-free sour cream or plain Greek yogurt (if not paleo)

Instructions
Marinate the shrimp:
In a bowl, combine shrimp, lime juice, oil, garlic, cumin, chili powder, salt, and optional cayenne. Toss to coat. Let marinate 10–15 minutes (no longer or the lime will start cooking the shrimp).Make the mango salsa:
Mix mango, bell pepper, onion, jalapeño, cilantro, lime juice, and salt in a bowl. Chill until ready to serve.Cook the shrimp:
Heat a skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side, until pink and opaque. Remove from heat.Warm the tortillas:
Heat in a dry pan or wrap in foil and warm in the oven.Assemble tacos:
Layer cabbage, shrimp, mango salsa, avocado, and any extras. Squeeze fresh lime juice on top.
