  • 2 tbsp fresh lime juice (about 1 lime)

  • 1 tbsp olive oil or avocado oil

  • 2 cloves garlic, minced

  • 1/2 tsp ground cumin

  • 1/2 tsp chili powder or paprika

  • 1/4 tsp sea salt

  • Optional: pinch cayenne pepper for spice

For the Mango Salsa:

  • 1 ripe mango, diced

  • 1/2 red bell pepper, diced

  • 1/4 cup red onion, finely chopped

  • 1 small jalapeño, seeded & minced (optional)

  • 2 tbsp fresh cilantro, chopped

  • Juice of 1/2 lime

  • Pinch of salt

For Serving:

  • 8 small tortillas (corn, cassava, almond flour, etc.)

  • Shredded cabbage or lettuce

  • Lime wedges

  • Optional toppings:

    • Avocado slices or guacamole

    • Dairy-free sour cream or plain Greek yogurt (if not paleo)

    • Extra cilantro


Instructions

  • Marinate the shrimp:
    In a bowl, combine shrimp, lime juice, oil, garlic, cumin, chili powder, salt, and optional cayenne. Toss to coat. Let marinate 10–15 minutes (no longer or the lime will start cooking the shrimp).

  • Make the mango salsa:
    Mix mango, bell pepper, onion, jalapeño, cilantro, lime juice, and salt in a bowl. Chill until ready to serve.

  • Cook the shrimp:
    Heat a skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side, until pink and opaque. Remove from heat.

  • Warm the tortillas:
    Heat in a dry pan or wrap in foil and warm in the oven.

  • Assemble tacos:
    Layer cabbage, shrimp, mango salsa, avocado, and any extras. Squeeze fresh lime juice on top.
