Ingredients
For the Shrimp:

1/2 tsp chili powder or paprika

1/4 tsp sea salt

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 cup red onion, finely chopped

1 small jalapeño, seeded & minced (optional)

2 tbsp fresh cilantro, chopped

Juice of 1/2 lime

Pinch of salt

8 small tortillas (corn, cassava, almond flour, etc.)

Instructions

Marinate the shrimp:
In a bowl, combine shrimp, lime juice, oil, garlic, cumin, chili powder, salt, and optional cayenne. Toss to coat. Let marinate 10–15 minutes (no longer or the lime will start cooking the shrimp). -
Make the mango salsa:
Mix mango, bell pepper, onion, jalapeño, cilantro, lime juice, and salt in a bowl. Chill until ready to serve. -
Cook the shrimp:
Heat a skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side, until pink and opaque. Remove from heat. -
Warm the tortillas:
Heat in a dry pan or wrap in foil and warm in the oven. -
Assemble tacos:
Layer cabbage, shrimp, mango salsa, avocado, and any extras. Squeeze fresh lime juice on top.
